It's not very volatile. It'll just freeze whatever it touches.I awesome when you dump a plastic glove in a tank filled with liquid nitrogen for two seconds, and it'll get all brittle and such. Our local science fair (that's open every day of the year almost) fquently put out shows that show off some of the funnier uses og liquid nitrogen.

That's some of the coolest stuff ever.
