I have this fobia of too many folders in emulators.
What can i delete ? This goes especially for Mame....

If I didn't know any better, I'd say that you can delete pretty much any of them, and MAME automatically recreates them when needed.

Or then it won't. Having a lot of folders just eases the file archiving if you're one of those people who like to collect every screenshot, marquee, etc. etc. It 's not like havcing lots of folders degrades the performance or anything like that.
